The start of summer marks the beginning of a new cycle, and nowhere is that more visible than in our native Giró Ros vines. Known for its generous productivity, this Mallorcan variety produces big clusters and big berries.

At Can Gelat Ecological Estate, we approach Giró Ros pruning in Mallorca with intention and care. Using the double cordon spur method, our vineyard team selects just eight shoots per vine, removing excess early in the season to guide the plant's energy.

This process, known as manual shoot thinning, helps maintain balance in our warm, dry Mediterranean climate. Fewer shoots mean better air circulation, improved ripening, and higher quality fruit. The result? Fewer grapes, but better ones — each bunch shaped by hand and nurtured by nature.

Pruning Giró Ros isn’t simply about counting shoots — it’s an intuitive practice. Each vine is unique and requires careful observation and experience. These early decisions influence the quality of the harvest, and ultimately, the character of the wine in your glass.
